Dried Cherry Cowboy Cookies

Tonight I am baking cookies to ship to my son, who will celebrate his birthday next week. These are chock full of goodies and are JUMBO sized. Big enough for a celebration and they travel by post far better than any kind of an attempt to mail a cake.

Dried Cherry Cowboy Cookies

2 sticks butter, softened
3/4 cup granulated sugar
3/4 cup brown sugar, firmly packed
1 teaspoon vanilla
2 large eggs
1/2 cup milk (I used sweetened Almond Milk)
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups rolled oats
3/4 cups pecan halves
3/4 cup sweetened flaked coconut
3/4 cup dried cherries
1/2 of a 7.05- ounce milk chocolate bar, chopped into chunks

Preheat the oven to 350 degrees F. Line 4 half-sheet baking pans with parchment paper. In a large bowl, beat the softened butter, both sugars and vanilla on medium-high speed until fluffy. Add the eggs, one at a time, beating until combined. Add the milk and beat until combined. In a large bowl, sift the flour, baking powder, baking soda and salt. Gradually add the flour mixture to the creamed butter mixture, beating at low speed until well mixed. Add oats, pecans, coconut, dried cherries and chocolate chunks. Mix on low speed to break up the large pieces until all are combined, but not smooth. Leave it chunky for texture. Using a 1/2-cup cookie scoop, drop the dough on the prepared baking sheets, leaving about 1 1/2 inches of space between the cookie mounds. Bake for 15 to 20 minutes, until the cookies are light brown in color. Let cool on pans for about 10 minutes. Lift from pans and transfer to wire racks to cool completely.

Makes about 2 dozen LARGE cookies. Yum. I should have spaced these just a little bit farther apart…….
